Ingredients:
1/2 cup coconut cream
1/4 teaspoon coarse sea salt
1/8 teaspoon ground nutmeg
1 pound russet potatoes (makes a firmer casserole)

Prep:
- Preheat oven to 400 degrees
- Peel and slice the potatoes
- Lay the potatoes evenly in a
shallow baking dish.
- Mix coconut cream, salt &
nutmeg together & pour over potatoes
- Bake until bubbling, golden
brown, and tender when pierced with a fork
- Cool slightly and serve
