Dairy Free Scalloped Potatoes









Prep Time: 30-45 min
Bake @ 400 degrees
Ingredients:
1/2 cup coconut cream
1/4 teaspoon coarse sea salt
1/8 teaspoon ground nutmeg
1 pound russet potatoes (makes a firmer casserole)
Prep:
  1. Preheat oven to 400 degrees
  2. Peel and slice the potatoes
  3. Lay the potatoes evenly in a shallow baking dish.
  4. Mix coconut cream, salt & nutmeg together & pour over potatoes
  5. Bake until bubbling, golden brown, and tender when pierced with a fork
  6. Cool slightly and serve
